Well after burning this cooker all but 1 weekend since firing it up ,I can say that I am fairly happy with it.I gave her the first good cleaning and all looks good.With time and warmer weather and some experimenting I am down to about 30# or so of lump to do a butt or brisket cook.Now I know that is still heavy on charcoal But most of these cooks have been 12 butts or more.Once it gets up to temp it is pretty miserly.It takes a lot of charcoal to get up to temp but once its there it stays.I have practiced all 4 comp meats on her and am satisfied .Now to build the trailer.

You going to make the Milwakee Gig this year? I am thinking that would be a good time to inspect the monster!

We have been cooking on ours every week end for a whlie now. Have made a couple of minor changes! I think we are ready for Paint. No time during the summer. Rusty or not the eats are sure good. Laughing

Jerry there is not going to be a Menomonee Falls comp this year.They said maybe next year again but none for this year.At present our comps will be

July Kingsford ,Mi
august DeForest,Wi
Westfield,Wi
Princeton,Wi
And if we have any money or ambition left possibly the downtowm Milwaukee contest Labor Day weekend or else Libertyville,Il in october.

Do you have any clear pic's of the charcoal chute and transfer tube?
Does the transfer tube go to the opposite end or does the the tube enter the chamber and the diffuser diverts the heat and smoke to the opposite end?
I really like the build just gathering info for my build, to decide in which direction I am going in.

I would like to see you again! Libertyville is pretty close. Deforest is pretty close to Madison and I am familiar with that area from school days gone by. Maybe we can get over for that one? If I have any time or money may be we can come over and give you a run for the money. Laughing

Westfield is also just north of Madison.Right on HWY 39.There will be a lot of new teams there I am told.Look forward to seeing you somewhere.

coz very good looking smoker. I am wanting to build a smaller version of that with a grill attached to it. Any thing you would change or do different does it run with out the guru

Jim ,we did 4 KCBS contests ,Kingsford Mi we were 5 th overall with 2 calls,DeForest ,Wi 10th overall Then we ditched the 2 new recipes we had been trying(pork and brisket) and went back to what we had used last year,Westfield Wi, Grand Champion with 3 walks ,Princeton Wi Grand Champion with 3 walks. We also did a local rib contest and was second in the blind judging and won the peoples choice. In the KCBS comps we had 1 top ten in chicken,2 1st places and a 7th in ribs,a second and a third in pork after we changed back to our old recipes, A 1st and a second in brisket after we changed back and a 6th before .I did judge a contest for the purpose of seeing what others turn in.All in all it was ok for the year the DeForest contest the brisket was so bad the neighbors dog wouldnt eat the leftovers.Kingsford I just didnt do the job I guess.The cooker is pretty damn good for this stuff.The next version should be better.

Katfsh. I dont run it often with out the guru but I did a practice comp cook and it ran fine.I built the top of this flat and if I was to use this shape again I would put a slope to the back to let the rain water and snow melt off go away from the door.I am going to add a counterweight this winter as the door is way to heavy.Also when you look at my pictures you will notice that I left the top of the chute level with the top of the cooker from now on I will raise it a few inches over the top panel of the cooker.

Jim, I am still contemplating the next model .I am thinking on keeping the reverse flow principle but in a more traditional square box with the refrigerator type swinging door.One of the things I like to do on the big cooks is rotate the meat so the bottom racks are not always getting the rub washed off.With the odd sized racks its a lot of dinking around moving butts from shelf to shelf.In a contest its not an issue but we do a lot of cooks where we are doing 16-24 butts so I would like to make life a little easier.I am pondering making a removeable baffle to play with the smoke/heat inlet to the cook chamber and having 2 outlets for the smoke/heat to exit the cook chamber and being able to shut one or the other when I find which one I prefer.Also will have Stainless chute in the next one.

Yes that is what we mean. Coz however has made his tapered chute quite a bit bigger of a taper than most have. I think if he ever gets a bridge in his it would be a miracle.
