Hope these two pics come through.
It took a while but I finally made a deal for all that oak wood from the bungs of the whiskey barrels at the distillery. It worked out to be 2/3rds of a 45gal drum of these "bung plugs" made of white oak. I got the oak and the other guy gets a pork butt smoked with the oak. For the next load that he gets, I trade him a brisket for the oak. I think I came out of this ok as the oak looks real good. I'll try show pics (no pics it didn't happen, right?).[/img]

If I remember right it was your suggestion to go for the trade. Thanks for the idea. This supply should last me a while. The guy said that he had more coming and I could have that for a brisket. I did a chicken with the bungs last week and it was very good. I found it to be a very very mild tasting wood. Maybe I should have used more of it in the cook, but I only threw on a few chunks.

How much of this stuff would be the right amount to use? I think I have been using too much of the chips that I bought from the store.

What cooker are you using Patrick? My senior mind is not letting me remember what you use. If it is a WSM, then I would think 3 or 4 chunks.

All I have right now until my builds are completed is a small offet that I bought at London Drugs a few years ago for $95.00. It has served well and some awesome cooking came off it but it is too small for me now. Was at the start too but I didn't know any better. My MUDSmoker is close to done so will be using that until my BossHog project comes online. Maybe this summer if all goes well. That will be a 24"x24"x48"long double-walled insulated smoker with a 20"20"x24"long firebox built much like a DP. Except this will require no welding, no cutting, no skilss or knowledge---jsut the ability to put together a smoker like you were working a mechano, or lego set.
I think that 3 or 4 pieces of this oak should be enough. They are like a small hockey puck (about 1.5" dia and 1" thick).
