I've got a couple of whole cut up chickens that I want to cook up on the WSM today. How long does that take? I really need to venture beyond thighs Laughing Also, what do people use the waterpan for, should I put water in it?

Well Trevor, one of my favorite ways to cook chicken pieces is on the WSM. I like to go with NO water pan, go direct. The fat dripping on the fire adds another layer of flavor that can't be duplicated. As far as time, use your thermometer is the best and safest way to tell.. I had it done way too early so I held it for a while. It wasn't bad but I definetly need to work on that timing. I can't believe how fast you can be up and cooking in a wsm. Once the charcoal goes in it's hot!
