close up of cleaver. used a cut off wheel to cut a slot into the smoker then we welded the cleaver in place from the bottom. |

stainless steel truck smoke stack. put handles on is so that I can rotate it so the wind doesn't blow down the stack cooling the smoker down and stagnating the smoke. |

I have cooked on her twice now. first time cooked a case of ribs and rib tips, about 24 - 36 chicken thighs, and some sausage. she hummed along at 245 deg.
Second time was last weekend. did a vending job and cooked 18 pork butts and some sausage. it got down to 34 degs that night with about a 10 MPH wind. again she just chugged along at 245 deg. used about 75 lbs of wood (50 lbs of apple & 25 lbs of Hickory).
I would say not bad. she gets to tme in about 30 - 35 min. I am very happy with how she cooks and the color of the meat. |
