Hi,
My wife & I attended the event in Morden this past weekend and were very glad we did!!! Thank you, Reese, Darrel and Jim for the great hospitality and vast quantities of information.
It was an excellent way to spend our 41st wedding anniversary. The food was absolutely fabulous!! Reese, your beans deserved a special award of their own.
I've been trying my hand at this for only a few weeks, after being exposed to the wonders of BBQ in Kansas City, KS.
I bought a CharBroil offset smoker from Canadian Tire and have turned some wonderful raw meat into barely edible shoe leather. I am learning however, and after seeing the barrel Chad was using, may soon upgrade to that.
Again, I thank you all for the great time we had & hope to meet up with you all again in the future. And Reese.... I owe you a ride in my coupe. |

Welcome to the forum.
Your CT offset sounds like the same one I bought. I too had trouble getting the temps to hold steady. I think it is because the unit is built from light gauge steel (almost tin) and it cools too quickly from firebox to stack.
Neither charcoal briquettes or lump seem to get enough heat. When you add wood, the temps spike and anything close to the firebox chars and the rest picks up creosote.
I even added a propane torch to try to regulate the heat, it helped, but not enough to use regularily.
Is this the same issue?

After seeing and tasting what BBQ can be on a "real" smoker, I'm reluctant to even try my CT offset again. I've ruined a lot of good meat!! |
